How to Prepare Nigerian Egg Stew

Egg stew is not one of the common stews/sauces made in Nigeria. It is, however, one of the fastest egg dishes to make in the average Nigerian home.

Ingredients for Nigerian Egg Stew

  • Eggs
  • Tomatoes
  • Onions
  • Grounded pepper or pepper/tomato puree
  • Curry and thyme (optional)
  • Salt
  • Seasoning.

Method of Preparation

  • Put a small pot on the fire and add some groundnut oil 
  • Heat for like 2 minutes. 
  • Then, add your diced onions and make it fry for like 2-3 minutes.
  • After the onions, you'll add in your diced tomatoes, grounded pepper (or pepper/tomato puree), little amount of salt, seasoning, curry, and thyme(optional). 
  • Then leave it to boil for like 5-10 minutes. 
  • After that, the eggs should be broken into a bowl and whisked 
  • Pour the whisked eggs into the boiling stew. 
  • Now, it depends on how you want the egg to form. If you want it caked DON'T STIR. After about 5 minutes, you can now stir.

Your delicious egg stew is ready to be served with any accompaniment of your choice. As we can see, egg stew is very easy to make.

It can be eaten with rice, bread, boiled yam, boiled potatoes, plantain etc.
