How to prepare egusi soup with style

Egusi soup is rich in fat and protein. It is prepared with melon seeds.

Ingredients for Egusi Soup

Egusi (grounded melon seeds)
Palm oil
Grounded pepper
Locust beans (iru)
Vegetable (ugwu) optional

Method of preparation

  • Rinse the stockfish well and boil if hard for about 20 minutes.
  • The ponmo also should be washed well
  • Then, put a small pot on the fire and add a small quantity of your palm oil.
  • Leave the palm oil to get hot/bleach for about 2 minutes.
  • After that, the diced onions should be poured and left to fry for about 2 minutes while constantly stirring.
  • Add the grounded pepper or fresh pepper and locust beans (iru) into the pot.
  • Leave to fry for 3 minutes.
  • Add the salt and seasoning to taste.
  • Now, be careful of the amount of salt added due to the fact that locust beans (iru) also has its own amount of salt.
  • Then put the amount of egusi you want to use into a bowl and put little quantity of water.
  • Mix well to make sure the egusi does not have any lump.
  • Pour into the pot and add your stock fish and ponmo.
  • Stir, then leave to boil for about 10 minutes.
  • This is the part where you may want to put your vegetable leaves.
  • After boiling for about 10 minutes while stirring intermittently

Your egusi is ready to be served with any food of your choice!!! It can be accompanied by rice, solids (Eba, amala etc).
